What do voice-over artists do?

The fact is that we are surrounded by the work of voice-over artists all day long. Television and radio commercials seem to be the most common media, but how often are we given information by a recorded voice without realizing - "Mind the Gap", "The mobile phone you are calling is switched off", "Car Park Level One"?
